I'm a novice in the kitchen, and I have been looking for a book that would walk me through not only some of the recipes, but also some of the science and trade secrets of great chefs and cooks. I haven't finished this book yet, but so far I definitely like the informal and humorous approach these authors take in explaining things. I met one of the authors a while back and I heard from a colleague that a book was coming, so I was anticipating buying this and trying to improve my culinary knowledge and skills. The authors favor a very practical approach, which I like. I don't need to go out and replace all of my equipment before I can attempt any of what's in this book, but the authors do give advice on what to look for when purchasing. Their advice all makes sense. I will finish this review after I hear some feedback on my next several attempts at cooking, (as a result of reading this book), but I am confident I will improve and be more competent and knowledgeable. This book is going to be a big help, and so far, it's pretty logical and interesting. It's definitely not a "cooking for dummies" type of book--it treats the reader with much more respect than that. I'm trying the first chicken recipe tomorrow. i almost forgot to mention that the fruit carvings in the book are done by one of the authors. these things are works of art. I hope the authors will please do some youtube demos explaining how they do these because they are unbelievable. you could write another book just about those carvings!Product details

I have always wanted to know "why" behind cooking and now I have seen it. Well done AND with a very light touch.
This is a beautifully presented book with gorgeous pictures. The recipes are clear and tasty too. All cooks should have this book in their kitchens.
Reading this book is like listening to your own personal cooking coach. The book is not so much a cook book, although many fine recipes are included, as it is a summary of great information to help one really perform in the kitchen. The book contains real practical advice such as what tools and equipment a good kitchen really needs and what we don't need. For example, I loved the advice that any gadget that only serves one purpose just isn't worth it!
The book includes sections on everything from herbs and spices, appetizers, soups, main entrees and of course, desserts. For each, background on the science and the techniques is provided so as to set a basis for the actual cooking. Koos and Shampoe make some things, like salad dressings, seem ever so simple, and others, quite a bit more manageable than I had previously thought. In fact, right now, fresh from my own garden, I have "tomato confet" in the oven and I expect it will be just as good as it looked in the book even if I did use my own yellow instead of Roma tomatoes.
I am looking forward to rereading parts of the book as I improve my own techniques in the kitchen and try out more of the recipes.

"A professional cooks guide to better home cooking." The subtitle says it all - this is a clear, concise guide to home cooking that also provides lovely pictures for inspiration. It starts off with "Why... (the authors cook)" and then goes right through the steps from equipment you need all the way to dessert. The book has a wonderful personal style. It feels as if you are sitting down with the two authors and they are giving you personal advice. Phrases such as, "my favorite..." or "I personally recommend...", are throughout the book. This is one of my favorite features because who wouldn't want to know the preferences of 2 top chefs?! My 9 year old niece, who plans to be a chef, loves the book as well - especially the beautiful watermelon design at the beginning of Chapter 4. Finally, at this modest price for a cookbook (most are $40+), I think this is a real deal.
